Bernard Pacaud trained with Eugénie Brazier — the legendary "Mère Brazier" of Lyonnaise cooking — and took over L\'Ambroisie in 1986. Escalope de Bar de Ligne au Caviar Osciètre — line-caught sea bass steamed, silky beurre blanc and Oscietra caviar. Classic French luxury, generous portion — Pacaud does not skimp on product.

Tarte Fine Tiède au Chocolat Amer — paper-thin pastry, warm dark-chocolate ganache, vanilla ice cream. A dessert to share — often cited as one of Paris's best chocolate tarts.

Plateau de Fromages — cheeses at the right stage of ripeness, served before dessert or instead of it. A good option if you prefer to finish without the chocolate tarte — though staff will probably suggest both.
